What do you think about alternating between the Advanced 5/3/1 template 5x5, 5x3, 5x1, for a cycle or two and then going back to the regular 5/3/1 where I set personal rep records? I just feel like my body needs the volume, less intensity once in a while. Or even switching between the two each week?

I think that's a great idea. I've used the Advanced 5/3/1 with lifters before and had great results.
I wouldn't switch between them each week though. I'd stick to one for at least 6 weeks. Then deload. Then the other for at least 6 weeks.
